While some choose to engage in equity & commodity trading in a way which is like gambling, that's a secondary use of an economic exchange which still fundamentally results in the transfer of an asset tied to something other than itself.

From the days of "My six sheep for your two cows" to modern derivatives, asset trading markets are useful and necessary for economic exchange, price setting and market clearing in a way that self-referential 'poker chips' are not.
