Old school search methods allow you to pursue multiple paths, but not necessarily based on probability. At the end (or while pruning) you can use "word knowledge".

Anyway, the probabilistic model doesn't exist. Simple probabilistic models work quite badly on speech recognition (word classification, etc.). A lot of structure needs to be added before they start performing.
