I've never used GPUI. Does GPUI provide the same assurances of accessibility? Of proper CJK rendering?

Activities will apparently still use Tauri. Is that going to be a compatibility nightmare due to WebKit? (At least until CEF comes out)

It render accetpable Chinese text, and the IME stuffs work on the control such as search box

Yes it can be made accessible, it's just not in the repo and needs to be integrated with other libraries. Things like https://github.com/longbridge/gpui-kit do it for you.

Think still has no accessibility, and given that the public framework is abandoned might not get there

Not quite abandoned, just that the Zed team stopped focussing on it. I've been building with this, very active GPUI framework: https://gpui-kit.com
