Hurl is also pretty neat if you combine it with Emacs and org-mode, as in this post: https://blog.wilcoxd.com/2025/04/03/Org-Mode-and-Hurl/
The downside for me is that I have a filesystem littered with .hurl files and no real organization. But it's one step more organized than just curl.
